It’s been a while since my last post. I think it was a combination of being uninspired, lack of groceries, and a hectic schedule. I’ve been all over the province lately to look for job opportunities and to visit the bf. It’s been a lot of fun, but a little tiring. Tonight I wanted something easy, fresh and delicious (train rides don’t allow for much fresh food).
This crafty, creation came out of my sure will to make my craving for Pico de Gallo into a meal.
I started off with Emeril’s Pico de Gallo Recipe from the Food Network:
- 1 1/2 cups seeded, diced tomatoes
- 1/4 cup diced red onion
- 1 tablespoon diced jalapenos
- 1 tablespoon minced garlic
- Juice of 2 limes
- 2 tablespoons cilantro, plus extra for garnish
- Salt and pepper
In a bowl combine all ingredients.
**Note** I only used juice from 1 lime and I found that to be enough. With this recipe you need to taste as you go.
My Pico de Gallo creation:
Serves: 2 Calories: Approx 375 per serving
- 2 cups of black beans
- 2 tortillas, 6″, preferably whole wheat
- Oil of your choice
Next I heated up 2 cups of black beans in the microwave, 1-2 minutes, and then mashed them.
Final step: heat about 1/8 Inch of oil in a pan on high. Once hot, place a tortilla in the pan. Flip once golden brown. When both sides are cooked, take out and place on a paper towel to get rid of excess oil before plating.
Spread some black beans on the tortilla and heap a hearty serving of Pico de Gallo on top. Delish!
